Tasting Notes
On the Nose:
A captivating blend of blackberry, violet, floral notes, spices, licorice, and oak tones.
On the Palate:
A harmony of blackberry, black cherry, plum, and oak undertones, creating a well-balanced and complex flavor profile.
Pairing Suggestions:
Pairs beautifully with a variety of dishes, including grilled steak, roast lamb, or venison, as well as aged cheeses and rich, flavorful sauces. When I grill a steak with this wine, I like to sauté mushrooms with a buttery garlic sauce and add a pat of gorgonzola cheese on top.
Closing Notes:
My friend Rick stays with us twice a year to visit and drink nice wines and grill beautiful steaks together. He always brings nice wines with him and this time he brought this Carter Cabernet Sauvignon with him but wanted us to open on a special occasion. We decided to open it up when I found out I passed my Sommelier Final. We grilled some nice dry-aged ribeye’s with the mushrooms with a buttery garlic sauce and gorgonzola cheese on top. It was fantastic. We let the wine open up prior to the meal for about an hour and it was a nice wine for this special occasion.
